Studies on the Existence of Brucella spp. in Fresh White Cheese and Tulum Cheese Marketed in Elazığ

In this study, presence of Brucella spp. were investigated in fresh white cheese and tulum cheese marketed in Elazığ. For this purpose 30 samples of white and 55 samples of tulum cheese were investigated.

In one of the white cheese samples 3.33% and in one of tulum cheese 1.18% Brucella spp. were observed. In the strains isolated from these two samples Brucella abortus and Brucella melitensis spp. were distinguished using identification methods. The species were found 3.4 x 105 cfu/g and 4.6 x 102 cfu/g using the plate counting method.

It is concluded that; white and tulum cheese produced from raw milk contain considerable amounts of Brucella spp. and therefore these types of cheese have potential hazards to public health. It is also concluded that these types of cheese must be produced using modern techniques such as pasteurisation, starter cultures and sufficient store condition.
