The Nitrate and Nitrite Levels of the Carra (Earthenware Jug) Cheese

This study was carried out to find out the nitrate and nitrite levels in Carra cheese consumed in Hatay region. In this study, 52 Carra cheese samples obtained from markets were used. The nitrate and nitrite levels of samples were determined to be beetwen 1.9-19.4 (average 8.4±4.2) and 0.3-6.7 (average 1.8±1.2) mg/kg, respectively. In conclusion, while the average quantity of nitrate in Carra cheese samples are within normal limits according to The Regulation Turkish Food Codex we believe that the average quantity of nitrite in cheese samples carries potential risk for the health of humans.
