Microbiological Quality of Ground Beef Retailed in Kayseri

A hundered samples of ground beef were randomly collected from retail markets in the city center of Kayseri and tested for the microbilogical quality. Average numbers of total coliform bacteria, E. coli, yeast and moulds, aerob mesophilic microorganisms, psychrophilics, Staphylococcus sp., coagulase positive Staphylococcus, sulfite reducing clostridia and C. perfringens were 1,8x107, 1,0x105, 5,1x107, 6,0x108, 1,9x106, 1,7x106, 8,7x105 and 1,8x104 cfu/g, respectively, in tested ground beef samples. Of 11 samples were found to be positive for Salmonella sp..The microbiological quality of ground beef analyzed was unsatisfactory and product could be an potential cause of food poisoning.
